Why Telashay
Cold-pressing means the oil is extracted by mechanical crushing alone — a cold press turning slowly — with no added heat and no chemical solvent, ever.
Heat is what a refinery uses to extract oil quickly and cheaply, often well above 100°C, sometimes with a solvent like hexane to strip out every last drop. That same heat degrades the compounds that make mustard oil what it is: allyl isothiocyanate, the compound responsible for its pungency and aroma, breaks down under high heat, and natural antioxidants go with it. Below 50°C, none of that happens — what comes out of the press is what was in the seed.
A refined oil is usually bleached and deodorised afterwards, because high-heat extraction leaves it needing both — the natural colour and smell are processed out, not left in by design. Cold-pressed oil never needs that step, because nothing was done to it that needs undoing.
