Kachi ghani mustard oil comes from the first, low-temperature pressing of the seed. It is sharper and more pungent than oil pressed at higher heat, and it is the traditional choice for North and East Indian cooking.
Yes. Telashay is 100% mustard oil from a single seed. It is not blended with palm, rice bran or soybean oil, and nothing is added for colour or flavour.

Yellow mustard oil is milder and golden, and suits everyday cooking. Black mustard oil is darker and much more pungent, so it is preferred for pickles, fish curry and tadkas.
